During his presentation, Tim Schiefelbein said, "There are three factors to grids: marbling, lean and out cattle. Out cattle is what we need to be concerned about. Are we trying to make Angus elephants by striving for 100-plus yearling weights?"
He said over the years people have asked themselves, how important is marbling? He told conference attendees the Bible answers the question, "Go out in the herd and pick a Choice, Tender steer for our guest" Genesis 18:7.
"I feel like I'm sinning if I buy Select beef," he added.
Schiefelbein finished his presentation by saying, "I'm bullish on beef especially Angus beef."
